Recipe: Egg Puffs

Since our chickens started laying eggs, I have been trying to think of good egg recipes. Today for lunch I made these little egg puffs and the kids and I loved them. Served with some bananas and whole wheat toast topped with home made strawberry jam.

Recipe: Egg Puffs

6 eggs
1/4 cup half and half
1/2 cup cheddar cheese
3 slices of ham sandwich meat (I used healthy ham from Trader Joe's)
1 chopped green onion
2 tsp. flour
salt and pepper to taste


Preheat oven to 400. Spray two mini muffin pans with nonstick spray. In a  medium size bowl scramble the eggs. Then add the half and half, mix well. Add the cheese, meat, green onion, salt and pepper and mix together. Next add the flour just until combined. Fill mini muffin cups about 3/4 full. Bake for 12-15 min.

*This recipe makes about 15-18 puffs. You can always double it to make more.
