Freezer Jam

Picking fresh local fruit is one of my favorite things to do with the kids. This week we went strawberry picking. In addition to the strawberry smoothies we made, I made freezer jam. I love this jam because it tastes just like fresh strawberries on your bread. It is called freezer jam one because you don't cook the strawberries and two you store it in the freezer instead of canning it and storing it on the shelf. You do need to buy special freezer jam plastic containers for this one. Glass could possibly break.

What you will need:
1 3oz pack oz. Ball Liquid Fruit Pectin (my favorite brand)
2 cups crushed strawberries
4 cups of sugar
2 tbsp lemon juice


Step 1: combine crushed strawberries with sugar in a large bowl. Mix thoroughly and let stand for 10 min.
Step 2: Add entire contents of liquid fruit pectin and the lemon juice. Stir for 3 min.
Step 3: Ladle freezer jam into clean freezer jars leaving 1/2 inch headspace. Put on lids, and put jars in refrigerator for 24 hours (no longer). Serve it immediately. Refrigerate for up to 3 weeks or freeze up to 1
year.
