Blueberry Muffins

I love this recipe for blueberry muffins. Every time I make them I get complements.

Recipe: Blueberry Muffins 
yields 12-18 muffins depending on size

2 1/4 cups flour
1 tsp. baking powder
1 tsp baking soda
1/4 salt (I like sea salt)
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar (light or dark)
1 large egg
1/2 tsp vanilla 
1 cup buttermilk or yogurt
2 cups wild blueberries (I use frozen but you can also use fresh)

Preheat oven to 375. Mix together the flour, baking powder, baking soda, and salt and set aside. Add vanilla and buttermilk /yogurt and set aside. In a mixing bowl cream together the butter and both sugars. Beat until fluffy and add the egg. Scrape the mixing bowl then in 3 additions add the dry ingredients and the wet ingredients. When just mixed, add the blueberries.  Bake for 15-20min.

* You can also make these  whole wheat muffins by subbing 1 cup white flour with whole wheat flour. You can also use a flavored yogurt like strawberry.
