I can't just eat a "loaf of meat." So I came up with a meat loaf full of hidden veggies. The kids always eat it and don't even know it has some veggies that they don't particularly like. Mushrooms for example.For this meat loaf I also used local grass fed beef.
Recipe:
2 lb ground beef
1 bell pepper
1 squash
1 zucchini
1/2 onion
handful of mushrooms
1/2 carrot
1/2 cup of bread crumbs
2 eggs
spices to taste I used (sea salt, pepper, garlic powder, onion powder, and thyme.)
ketchup
You can use any of your favorite veggies for this recipe. I bet spinach would go really well in it also. The key is to chop them really fine so any picky eaters cant recognize them.
After you have cut up all the veggies, add the meat and 2 eggs. Then mix in the bread crumbs and spices. I like to get in there with my hands. Now if you are like me and don't have time to wait on a meat loaf. You can make several mini meat loaves. They cook in half the time. Brush on some ketchup and bake @350 for 45min to 1 hour (depending on the size you formed them).
