This is my famous biscuit recipe. I worked on several variations of this recipe until I finally got it perfect. Having these biscuits on Saturday morning has become a tradition at our house. They go great with home made strawberry jam.
It can be hard for some families to all get together for a sit down meal. For our family, we hold meal time as an event. We like to spend the time together and talk about our day. Our favorite meal together is Saturday Morning breakfast. We all help out making it and we usually spend a long time at the table just talking. I love having this as a tradition.
So without further ado......The Saturday Morning Biscuit Recipe :)
Recipe:
2 Cups winter wheat flour (White Lilly)
1 1/2 Tbl Sp baking powder
1 Tsp salt
1/4 cup chilled shortening (I just pop it in the freezer for a few min.)
1/2 stick butter (cold)
1/2 stick butter melted
3/4 to 1 cup buttermilk
Pre heat oven to 485. stir together the dry ingredients. cut in the chilled shortening and butter with a pastry cutter (two butter knives will work if you don't have a pastry cutter) with a fork mix in the butter milk only until the dough comes together. lay out a floured piece of foil and knead just a couple of times about 3-4. I just press it into a circle about 1 1/2 inch thick. Cut out about 5 biscuits and gently form the scraps into the same size to make the 6th biscuit. put them on a thick non stick tray or thick cookie sheet with sides nearly touching. Brush on the melted butter. Bake for 8-10 min.
*Tip* If you don't have butter milk, you can put a splash of vinegar (about 1/2 tsp) in your regular milk. I usually use 2% if out of buttermilk.
*Tip* What is "cutting the butter"? Well this ====>
is a pastry cutter, makes it so easy. Just press it in until your dry mix looks like corn meal.
*Tip* make sure the dough is at least 1 1/2 inch thick. That is the secret to making fluffy biscuits. A lot of times people roll it out to thin. I don't even use a roller. I just use my hands.
*Tip* Be generous when brushing on butter. Hey this is not health food so if you are going to eat it, make it good ;)
if you add 2 tbl spoons sugar you have short cakes. You can add either strawberries or blue berries reduced to make a simple syrup to top them. So yummy.
